Matcha Apple Cake recipe (intermediate)

Who doesn't love apples especially when it's in season? There're so many ways of working with apples. Today we're excited to share a recipe with 2 best things in this world: matcha & apple!

Ingredients:
Matcha cake
● 1 1⁄2 cup unsweetened soy milk
● 2 tsp apple cider vinegar
● 6 tbsp unsweetened applesauce
● 6 tbsp vegetable oil
● 2 cups all purpose flour
● 1⁄2 cup granulated sugar
● 2 tsp baking powder
● 1⁄2 tsp baking soda
● Pinch of salt
● 4 TBSP of Y2 Whisk Matcha powder (20g)


Apple filling
● 3 small red apples, cut into small chunks
● 1⁄3 cup brown sugar, packed
● 1 tbsp cornstarch
● 1⁄2 tsp cinnamon
● 1⁄4 tsp nutmeg
● Pinch of ground cloves
● Pinch of salt


Matcha streusel topping
● 1 1⁄2 tbsp vegan butter, melted
● 1⁄4 cup all purpose flour
● 2 tbsp granulated sugar
● 1 tsp Y2 Whisk Matcha powder
Cinnamon glaze
● 1⁄2 cup icing sugar
● 1 tbsp unsweetened soy milk
● Pinch of ground cinnamon

Directions:
1. Preheat the oven to 350oF and line a 8x8 cake pan with parchment paper.
2. Mix all of the ingredients for the apple filling in a pot and simmer on medium-low heat for 10-15 mins. Stir constantly to avoid burning the bottom. Allow the mixture to cool completely.
3. Whisk together the unsweetened soy milk and apple cider vinegar. Set aside to
curdle.
4. Sift all purpose flour, baking powder, baking soda, salt, and Y2 Whisk Matcha
powder into a large mixing bowl. Add the sugar and whisk all the dry ingredients
together.
5. Pour the curdled soy milk, oil, and applesauce into the dry mixture. Use a rubber spatula to mix until there are no traces of flour, being careful not to overmix the batter.
6. In a bowl, combine the ingredients for the matcha streusel until a crumbly texture forms.
7. Pour half of the matcha cake batter into the 8x8 cake pan. Layer all of the apple
mixture on top. Cover the apple mixture with the remaining cake batter. Evenly
sprinkle the matcha streusel on top.
8. Bake on the middle rack for 35-40 minutes. A toothpick inserted in the middle of the cake should come out clean, or with dry crumbs.
9. Allow the cake to cool in the pan for at least 10 minutes before carefully lifting onto a cooling rack to cool completely.
10. In a small bowl, whisk together the ingredients for the cinnamon glaze. Drizzle on top of the coffee cake and serve in slices.
